What is Gluten Free Food, basically it is food that does not have the gluten protein in it.  Gluten is found in grains such as wheat, barley, rye, and a cross between wheat and rye called triticale.  The protein gluten causes inflammation in the small intestines of people with celiac disease or Hashimoto’s Thyroiditis.

There are alternatives to wheat or grains for making flour such as buckwheat which has no gluten at all and green lentils, flour can be made from both of these alternative sources.  These days there are flour grinding machines that can help people at home to make their own flour that is gluten free and GMO free.  One of these flour grinding machines is the NutriMill Grain Mill.  It will be described in the below PDF presentation.

Since wheat and grains are used to make things like pancakes, cookies, muffins, and pasta among other baked foods, this can be substituted with the buckwheat flour, and the green lentil flour in order to make the same foods without having the issues of allergic reactions like itchy eyes, headaches/migraines, or an inflamed stomach.

In conventionally famed wheat and grain, herbicides like Roundup are used to quickly harvest grains or wheat’s.  Roundup has an active ingredient called glyphosate which can be deadly.  The reason why Roundup with glyphosate can be deadly is because it disrupts the all-important shikimate pathway found in beneficial gut microbes which are responsible for synthesis of the critical amino acids.  Friendly gut bacteria, also called probiotics, play a critical role in human health.

These gut bacteria aid digestion, prevent permeability of the gastrointestinal tract (which discourages the development of autoimmune disease), synthesizes vitamins and provides the foundation for robust immunity.  In simple words “Roundup significantly disrupts the functioning of the beneficial bacteria in the gut and contributes to permeability of the intestinal wall and the consequent expression of autoimmune disease symptoms”.  Glyphosate also inhibits the cytochrome P450 (CYP) enzymes produced by the gut microbiome.  CYP enzymes are critical to human biology because they detoxify the multitude of foreign chemicals compounds, xenobiotics that we are exposed to in our modern environment today.  As a result of Roundup and glyphosate use in wheat and grain, humans are even more vulnerable to the damaging effects of other chemicals and environmental toxins that are encountered.

In other ways, beside wheat, avoid rye, and barley. Instead be creative with corn(organic), Buckwheat (cook it just like rice), and this is not wheat, remember this.
